Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie or tart pan with a small amount of shortening.

In a large mixing bowl, combine the flour, quick-cooking oatmeal, firmly packed brown sugar, baking soda, and salt, stirring until evenly mixed.

Cut the shortening into the dry ingredients using a pastry cutter or your fingertips until the mixture resembles coarse, crumbly pea-sized crumbs.

Press approximately two-thirds of the oat crumb mixture firmly and evenly into the bottom and up the sides of the prepared pan to form the crust.

Spoon the cherry pie filling evenly over the pressed crust, spreading it to within a half inch of the edges.

Sprinkle the remaining oat crumb mixture evenly over the top of the cherry filling to create a crumble topping.

Bake in the preheated oven for 30 to 35 minutes, or until the topping is golden brown and the cherry filling is bubbling around the edges.
