In a large mixing bowl, combine the cottage cheese, eggs, baking soda, and vanilla extract, stirring until a smooth, cohesive dough forms.

With lightly floured or dampened hands, shape the dough into small, evenly sized balls roughly the size of a walnut and set them aside on a plate.

In a medium saucepan, combine the sugar with enough water to make a thin syrup, bring to a boil over medium heat, and stir until the sugar is fully dissolved.

Reduce the heat to a gentle simmer and carefully drop the cottage cheese balls into the syrup in batches, making sure not to overcrowd the pan.

Cook the balls in the syrup for about 8 to 10 minutes, turning them gently halfway through, until they are cooked through, puffed, and lightly firm to the touch.

Remove the cooked balls with a slotted spoon and transfer them to a serving dish, then pour the remaining warm syrup over the top.
