Method

Combine ground vanilla wafer cookies, pecan crumbs, powdered sugar, and Dutch cocoa powder in a large mixing bowl, stirring until evenly blended.

Add the white Karo syrup and apple juice to the dry mixture, stirring thoroughly until the ingredients form a moist, cohesive dough.

Roll the mixture into 1-inch balls, using a light hand to avoid overworking the dough.

Arrange the formed balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes until firm.
