Add the chopped pecans to the food processor with the apricots and pulse a few more times until the pecans are finely chopped and well incorporated.

Transfer the apricot and pecan mixture to a mixing bowl, then drizzle in the lemon juice and stir thoroughly to combine.

Spread the shredded coconut out in an even layer on a clean plate or shallow dish and set aside for rolling.
