Ingredients

  • Yellow or ripe bananas

  • Coconut milk

Method

Peel 4-6 very ripe bananas and slice them into rounds or mash them thoroughly with a fork until smooth, depending on your preferred texture.

In a medium saucepan, combine the prepared bananas with 1 to 1Β½ cups of coconut cream and 3-4 tablespoons of sugar, stirring to mix well.

Place the saucepan over medium-low heat and cook the mixture, stirring frequently to prevent scorching, until the sugar dissolves completely and the ingredients are well combined.

Reduce the heat to low and continue to simmer the pudding, stirring regularly, until the mixture thickens to a rich, creamy consistency.

Taste the pudding and adjust sweetness by adding more sugar if desired, stirring until fully incorporated.

Remove the saucepan from the heat and allow the pudding to cool slightly, then pour it into individual serving bowls or a large dish.
