Ingredients

Method

Bring water to a boil in a small saucepan over medium-high heat.

Add grated carrots to the boiling water and simmer for 3-4 minutes until softened.

Remove from heat and stir in the fresh ginger root, allowing it to infuse for 2 minutes.

Strain the carrot-ginger mixture through a fine-mesh sieve into a bowl, pressing gently on the solids to extract liquid; discard solids and let cool to room temperature.

Combine the cooled carrot-ginger infusion with the chilled apple juice in a large pitcher and stir until well blended.

Fill four glasses with crushed ice and pour the cocktail mixture evenly over each serving.
