Combine the chopped rhubarb and water in a large saucepan. Bring to a boil over medium-high heat, then reduce heat and simmer gently.

Continue simmering until the rhubarb is completely soft and breaks apart easily, about 15-20 minutes.

Pour the mixture through a fine-mesh strainer or cheesecloth into a bowl, pressing gently on the rhubarb to extract all the liquid. Discard the solids.

Return the strained liquid to the saucepan and stir in the sugar and lemon juice until the sugar dissolves completely.

Heat gently over low heat for 2-3 minutes, stirring occasionally, until the nectar is warm and well combined.

Remove from heat and let the nectar cool to room temperature, then refrigerate until chilled.

To serve, pour the nectar into glasses and top with soda water if desired for a refreshing fizzy drink. Adjust sweetness or tartness to taste.
