Ingredients

  • seltzer water
    3 quarts
  • 2 cups
  • Torani raspberry syrup
    2⅓ cup
  • Torani orgeat (almond syrup)
    ¾ cup

Method

Chill a highball glass by filling it with ice cubes and setting it aside to cool while you prepare the drink.

Pour a measured amount of whipping cream into a small mixing bowl or shaker. Lightly whip or stir the cream until it is just slightly aerated but still pourable.

Discard the ice from the chilled highball glass and add a generous fresh handful of ice cubes to fill the glass about two-thirds full.

Slowly pour the lightly whipped cream over the ice, allowing it to settle and coat the ice evenly for a rich base layer.

Top the drink with a chilled sparkling or effervescent mixer of your choice, pouring gently down the side of the glass to preserve the bubbles.

Using a long bar spoon, gently stir the drink once or twice from the bottom to lightly integrate the cream with the fizz without deflating the carbonation.

Garnish the rim of the glass with a festive holiday garnish such as a sprig of mint, a maraschino cherry, or a twist of citrus peel.
