Method
1
Combine flour and salt in a large mixing bowl, then create a well in the center.
2
Cut butter into small cubes and rub into the flour using fingertips until the mixture resembles coarse breadcrumbs.
3
Beat 2 eggs together in a small bowl, then add to the flour mixture along with water, a little at a time, mixing until a soft dough forms.
4
Knead the dough on a lightly floured surface for 2-3 minutes until smooth and elastic, then let rest for 5 minutes.

5
Roll out the dough on a floured surface to about ¼-inch thickness, then cut into rectangular strips approximately 3 inches wide.
6
Place one piece of sausage on the end of each dough strip, then roll tightly, sealing the edge with a little water.
7
Arrange the sausage rolls seam-side down on a greased baking tray, spacing them about 1 inch apart.
8
Beat the egg yolk with 1 tablespoon of water to create an egg wash, then brush over each sausage roll.
9
Bake in a preheated 400°F (200°C) oven for 20-25 minutes until golden brown and cooked through.
