Zimtsterne

These are typical Christmas cookies in Switzerland. I got the recipe while doing an exchange year in Switzerland. They are good anytime of the year though!

Beat the 3 egg whites with a pinch of salt using an electric mixer until stiff peaks form, about 3-4 minutes.

Gradually add the 250 g powdered sugar to the egg whites while continuing to beat, then fold in the lemon juice until fully incorporated.

In a separate bowl, combine the 350 g ground almonds with the 1½ tablespoons cinnamon, mixing thoroughly.

Gently fold the almond-cinnamon mixture into the meringue using a spatula, working carefully to preserve the airy texture.

Preheat the oven to 150°C (300°F) and line baking sheets with parchment paper.

Transfer the dough to a piping bag fitted with a small star tip and pipe star-shaped cookies onto the prepared baking sheets, spacing them about 2 cm apart.

Bake the Zimtsterne for 12 minutes, or until the stars are set but still pale, with no color developing.

Remove from the oven and allow the cookies to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
