Vanilla Sugar Valentine Cookies with Lemon Icing
I haven't eaten these but I made them for Sam's state school class. The kiddos that could tell me said they were great. 'cause they will be eaten fast!

- ¾ cup

- real vanilla extract or (vanilla sugar)1 tablespoon

- about 1 teaspoon xanthan gum1 unit
- regular rice flour mix #1 (see below for ingredient mixes for Trina's gluten-free flour mixes)2½ cups
- glutinous rice flour mix #21 cup

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

Cream together the room-temperature butter and white sugar until light and fluffy, about 2–3 minutes, using an electric mixer on medium speed.

Mix in the light corn syrup and real vanilla extract until well combined.

Add the eggs one at a time, beating well after each addition to incorporate fully.

In a separate bowl, whisk together the salt, xanthan gum, regular rice flour mix #1, and glutinous rice flour mix #2.

Fold the dry mixture into the wet ingredients using a rubber spatula or wooden spoon until just combined; do not overmix.

Spoon or pipe the dough onto prepared baking sheets, leaving about 2 inches between cookies for spreading.

Bake for 12 minutes, or until the edges are set but the centers remain soft with a light golden color.

Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before icing.
