Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Combine mashed sweet potatoes, flour, margarine, and salt in a large mixing bowl, stirring until a soft dough forms.

Turn dough onto a lightly floured surface and knead gently 2-3 times until the mixture comes together without cracks.

Divide dough into 16 equal portions and roll each into a ball, then flatten slightly to create a disc about ½ inch thick.

Place flattened cookies on the prepared baking sheet, spacing them 2 inches apart.

Bake for 12-15 minutes until the edges are light golden and the tops are set but still slightly soft.
