- 1¾ cups

- ¾ cup
- pkg. (4 serving) strawberry1 unitraspberry or lime sugar-free Jell-O
- 1 unit

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Whisk together all-purpose flour and baking powder in a small bowl, then set aside.

Cream together butter and the contents of the sugar-free Jell-O package in a large bowl until light and fluffy, about 2–3 minutes.

Beat in the egg and vanilla extract until well combined and smooth.

Fold the flour mixture into the wet ingredients until just combined; do not overmix.

Drop rounded teaspoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10–12 minutes until the edges are set and the cookies are lightly golden.
