Red Plum Crumb Bars

This recipe came from the Hartman Estate Sale. It was obtained it as part of the purchase of the Family Collection from the Hartman Estate in Arlington, Texas in 1984.

Preheat oven to 350Β°F. Combine brown sugar, flour, butter, oatmeal, baking soda, vanilla extract, and salt in a large mixing bowl until the mixture resembles coarse crumbs.

Press half of the oat mixture firmly into the bottom of a greased 9x13-inch baking pan to form an even base layer.

Spread red plum jam evenly over the oat base, leaving about 1/4 inch from the edges.

Sprinkle the remaining oat mixture over the jam layer, pressing gently so it adheres but remains crumbly.

Bake for 30-35 minutes until the top is golden brown and the edges are set.

Remove from oven and cool completely in the pan on a wire rack before cutting into squares.

Dust the cooled bars lightly with powdered sugar just before serving.
