Peanut Butter Cookies III

Preheat oven to 350°F (175°C).

Combine peanut butter, light brown sugar, and vanilla in a large mixing bowl, stirring until well blended.

Beat in the eggs one at a time, mixing thoroughly after each addition until fully incorporated.

Stir in the water and rum or brandy flavor until the mixture is smooth and uniform.

Gently fold in the sifted flour until just combined, being careful not to overmix.

Drop rounded teaspoonfuls of dough onto an ungreased baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes until the edges are lightly golden and the centers are set.

Remove from oven and allow cookies to cool on the baking sheet for 2-3 minutes before transferring to a wire rack.
