Preheat oven to 400°F (200°C).

Combine yellow cornmeal, flour, baking powder, and salt substitute in a large mixing bowl, whisking together until evenly distributed.

Create a well in the center of the dry ingredients and pour in the beaten egg and skim milk.

Stir the wet and dry ingredients together until just combined; do not overmix, as lumps in the batter are desirable for texture.

Pour the batter into a greased 9-inch cast iron skillet or standard baking pan, spreading it evenly.
