Green chilies (Capsicum annuum varieties) are immature, unripe peppers harvested before they mature to red. The most common variety used in canned preparations is the New Mexico green chile (also called Hatch chile when grown in that region), which features a mild to moderate heat level (500–2,500 Scoville units) and a distinctive earthy, slightly smoky flavor. When canned, they are typically roasted and peeled to remove the tough outer skin, then packed in brine or sometimes tomato sauce. The canning process softens the flesh slightly while preserving the characteristic flavor and heat.

Canned green chilies represent a convenience product widely available in North American supermarkets, particularly in regions with strong Southwestern cuisine traditions. They retain much of the fresh pepper's nutritional value and flavor profile while offering year-round availability and extended shelf stability.
