wedges cabbage

ProduceCabbage is available year-round in most markets, with peak harvest from late summer through fall. Storage in cool conditions allows winter availability in temperate climates.

Cabbage is an excellent source of vitamin C, vitamin K, and dietary fiber, with low caloric density. Red cabbage contains additional anthocyanins and antioxidants that contribute to its deeper color and enhanced nutritional profile.

About

Cabbage (Brassica oleracea var. capitata) is a leafy cruciferous vegetable native to the Mediterranean region, characterized by dense, compact heads formed by tightly layered leaves that range in color from pale green to deep purple. The vegetable is divided into round-headed and conical-headed varieties, with the most common culinary types being green cabbage, red (purple) cabbage, and Savoy cabbage, each with distinct textural and flavor characteristics. Green cabbage has smooth, pale leaves with a mild, slightly sweet flavor; red cabbage offers earthier, slightly more assertive tones with a firmer texture; and Savoy cabbage features crinkled, tender leaves with a more delicate taste. When cut into wedges, the cabbage retains its structural integrity due to the leaves remaining connected at the core, making this cut ideal for roasting, grilling, and braising.

Culinary Uses

Cabbage wedges are employed across numerous culinary traditions for both simple and complex preparations. The wedge form is particularly suited to roasting, where high heat caramelizes the outer leaves while keeping the interior tender and sweet; this preparation is central to Scandinavian and German cuisines. Wedges are also commonly grilled, steamed, and braised, especially in Eastern European dishes where they serve as the base for stuffed cabbage rolls. In Asian cuisines, wedges are often quartered further for stir-fries, slaws, and pickled applications. The intact core structure of wedges makes them ideal for dishes requiring the cabbage to maintain visual definition, such as composed vegetable plates and composed salads.
