Walnut oil is a cold-pressed or expeller-pressed oil extracted from the kernels of walnuts (Juglans regia and Juglans nigra), primarily cultivated in temperate regions worldwide, with significant production in France, China, and North America. The oil possesses a distinctly nutty, earthy flavor with subtle herbaceous notes and ranges in color from pale amber to deep brown depending on the degree of roasting applied to the nuts before pressing. Cold-pressed walnut oil, the most prized culinary variety, retains a delicate flavor and nutritional profile, while roasted versions offer deeper, more robust nuttiness.

Walnut oil is prized for its high content of omega-3 polyunsaturated fatty acids (alpha-linolenic acid), which distinguishes it from most other culinary oils. The oil's composition and flavor intensity make it suitable for finishing dishes rather than high-heat cooking, as heat diminishes its nutritional value and can produce off-flavors.

Culinary Uses

Walnut oil is primarily used as a finishing oil in vinaigrettes, dressings, and drizzles over soups, roasted vegetables, and grain dishes. Its pronounced nutty character complements salad greens, beetroot, goat cheese, and bitter greens, and it is a signature component in traditional French and Middle Eastern cuisines.
