The avocado (Persea americana) is a fruit native to south-central Mexico, belonging to the Lauraceae family. It is a pear-shaped drupe with thin, dark green to blackish bumpy or smooth skin, containing a large central stone (pit) surrounded by pale yellow-green, creamy flesh. The fruit has a subtle, buttery flavor and high fat content, distinguishing it from most other fruits. Major cultivars include the Hass (most widely cultivated), Fuerte, Bacon, and Zutano varieties, which differ in size, shape, and season of maturity.

The avocado's remarkable composition—approximately 70% of its calories from fat, primarily monounsaturated fats—and its ability to develop ripeness after harvest made it a commercially significant crop. The Aztecs, who called it "ahuacatl," domesticated and cultivated wild avocado species thousands of years ago.

Culinary Uses

Avocado is prized globally for its rich, creamy texture and mild flavor, making it versatile across cuisines. It is central to guacamole (a Mexican preparation of mashed avocado with lime, cilantro, and chiles) and appears prominently in sushi rolls, salads, and sandwiches. In addition to raw consumption, avocado is incorporated into soups, particularly chilled versions in Latin American cuisine, and used as a garnish for tacos, ceviche, and grain bowls. Its neutral taste complements both savory and slightly sweet applications. The fruit should be sliced or scooped just before serving to minimize browning, though acidic ingredients such as lemon or lime juice help preserve its color.
