Berbere is a complex, pungent spice blend indigenous to Ethiopian and Eritrean cuisines, whose name derives from the Amharic word for "pepper." The blend typically comprises dried red chilies, fenugreek, coriander, cardamom, black pepper, cinnamon, cloves, allspice, and nutmeg, though regional and family variations exist. The mixture is characterized by its deep reddish-brown color, warm and slightly sweet aromatics balanced against considerable heat, and earthy undertones. Traditional preparation involves toasting whole spices before grinding, a process that deepens flavor complexity and ensures freshness in the final blend.

Culinary Uses
