They exhibit a round to slightly flattened shape with thin, smooth skin ranging from green when unripe to vibrant red, pink, orange, or yellow at maturity. The interior contains numerous small seeds surrounded by a gelatinous substance and fibrous flesh. Flavor intensity varies by variety, growing conditions, and ripeness, ranging from bright acidity and subtle sweetness in fresh market varieties to concentrated umami and complex sweetness in heirloom or vine-ripened cultivars.
