thick bacon

MeatYear-round. As a cured and smoked product, thick bacon is shelf-stable and widely available throughout the year, though demand traditionally increases during breakfast season and winter months.

Thick bacon is a significant source of protein and fat, including both saturated and monounsaturated fats. It provides B vitamins, selenium, and phosphorus, though it is high in sodium due to the curing process.

About

Thick bacon is cured and smoked pork belly cut into slices substantially thicker than standard bacon, typically 1/4 inch (6 mm) or more in depth. Unlike thin-cut bacon, thick bacon retains more of the pork belly's structure, with pronounced layers of meat and fat. The curing process involves salt and often sugar, sodium nitrate, or similar preservatives, followed by smoking over hardwood, which imparts a savory, smoky character. Regional variations exist, such as English back bacon (cut from the loin rather than the belly) and Canadian bacon. Thick bacon maintains a meatier texture and renders more slowly during cooking, developing crispy edges while preserving a tender interior.

The flavor profile is distinctly pork-forward with pronounced smokiness, saltiness, and subtle sweetness depending on the cure formula and smoking wood used.

Culinary Uses

Thick bacon is used as both a primary ingredient and a flavoring component across numerous cuisines. In American and British cooking, it appears as a breakfast staple—pan-fried until edges crisp while the interior remains supple—or incorporated into composed dishes such as bacon, lettuce, and tomato sandwiches, salads, and composed plates. Its robust flavor and meaty texture make it suitable for braising, grilling, and inclusion in braises, stews, and bean dishes where it acts as a seasoning fat and protein element. Diced thick bacon renders into lardons for French preparations like quiche Lorraine, coq au vin, and lentil salads. The thicker cut resists shattering during cooking, making it preferable for applications where texture must be preserved, such as bacon-wrapped items or dishes requiring substantial bacon pieces.
