Sesame oil is a flavorful oil extracted from sesame seeds (Sesamum indicum), a flowering plant native to Africa and cultivated extensively throughout Asia. The oil comes in two primary forms: refined, light sesame oil, which is nearly colorless and relatively neutral in flavor, and toasted (dark) sesame oil, made from roasted sesame seeds, which possesses a deep amber to brown color and a distinctly nutty, complex, umami-rich aroma and taste. The toasted variety is the more common form in East and Southeast Asian cuisines. Sesame oil is prized for its intense flavor and aroma, derived from compounds such as sesamin and sesamol that develop during the roasting process.

The oil contains approximately 45-50% linoleic acid (an omega-6 polyunsaturated fat) and 40% oleic acid (a monounsaturated fat), with trace amounts of lignan compounds that contribute to its antioxidant properties.

Culinary Uses

Sesame oil serves as both a cooking medium and a finishing oil in Asian cuisines, particularly Chinese, Japanese, Korean, and Vietnamese cooking. In hot applications, refined sesame oil is used for stir-frying due to its higher smoke point (approximately 350°F/175°C). Toasted sesame oil, with its lower smoke point (approximately 320°F/160°C), is primarily employed as a condiment and flavor enhancer—a few drops finish soups, dressings, noodle dishes, and dips. It appears in essential dishes such as miso soup, ramen, bibimbap, pad thai, and Vietnamese dipping sauces. The oil is also used in some Middle Eastern and Indian preparations. Small quantities deliver significant flavor, making it economical despite its higher cost relative to neutral oils.
