Sesame oil is a fragrant oil extracted from sesame seeds (Sesamum indicum), a flowering plant native to Africa and cultivated extensively throughout Asia. The oil exists in two primary varieties: light sesame oil, pressed from raw seeds and mild in flavor, and dark sesame oil (also called toasted sesame oil), made from roasted seeds and possessing a deep amber color with a rich, nutty, distinctly aromatic flavor. Dark sesame oil, the more common culinary form, has a low smoke point (around 350°F/177°C) due to its processing and high polyunsaturated fat content, making it unsuitable for high-heat cooking but ideal for finishing dishes and flavor enhancement.

Culinary Uses

Sesame oil is a fundamental seasoning ingredient in East and Southeast Asian cuisines, particularly Chinese, Japanese, and Korean cooking. It is used as a finishing oil in stir-fries, soups, noodle dishes, and dressings rather than as a primary cooking medium. Small quantities are drizzled over completed dishes to impart nutty depth and aromatic complexity. Common applications include salad dressings, marinades for grilled meats and fish, dipping sauces (especially with soy sauce), and as a flavor component in hummus and Middle Eastern preparations.
