Ground coriander is the dried and pulverized fruit (commonly called seed) of Coriandrum sativum, an herbaceous annual plant native to the Mediterranean and southwestern Asia. The coriander fruit is a small, round, ridged schizocarp approximately 4-5 mm in diameter, with a pale tan to brown color. When ground, it releases a warm, slightly sweet, and citrusy aroma with subtle floral notes and a faint hint of anise. The flavor profile is distinctly warm and aromatic, less pungent than whole seeds, and becomes more mellow and integrated when toasted before grinding.

Culinary Uses

Ground coriander is fundamental in Indian, Middle Eastern, Latin American, and Southeast Asian cuisines. It serves as a base component in curry powders, garam masala, and ras el hanout, and appears in rubs for roasted meats and vegetables. Common applications include seasoning soups, stews, pickles, and bean dishes; it pairs particularly well with cumin, cardamom, and turmeric. Ground coriander is also used in baking, notably in Scandinavian breads and spiced cakes. The spice complements both warm and cold preparations and is often toasted before use to amplify its aromatic qualities.
