Garlic powder is a dehydrated and finely ground form of garlic (Allium sativum), a pungent bulbous perennial in the Amaryllidaceae family native to Central Asia. Fresh garlic cloves are dried and then milled to produce a fine, free-flowing powder with a concentrated peppery, sulfurous flavor and characteristic sharp bite. The dehydration process concentrates the volatile sulfur compounds responsible for garlic's distinctive aroma and taste, though some of the fresh, bright qualities are lost compared to raw or freshly cooked garlic. Commercial garlic powder is typically produced from mature, cured cloves and may include anti-caking agents such as silicon dioxide.

Culinary Uses

Garlic powder serves as a convenient dry seasoning in rubs for meats, spice blends, and dry marinades where moisture would be undesirable or where even distribution is important. It is widely used in American cuisine—particularly in barbecue rubs, seasoning salts, and ranch-style dressing mixes—as well as in soups, stews, gravies, and ground meat dishes. Unlike fresh garlic, garlic powder does not caramelize or develop the same complex sweetness when cooked, making it best suited to applications where a straightforward garlic flavor is desired without cooking development. It is commonly paired with onion powder, paprika, and other dried spices, and works well as a finishing seasoning or in applications where fresh garlic cannot be properly incorporated.
