Oils & FatsYear-round. As a refined, shelf-stable oil derived from dried corn kernels, corn oil is available throughout the year without seasonal variation.

Corn oil is rich in polyunsaturated and monounsaturated fats while being low in saturated fat; it is also a source of vitamin E and phytosterols, compounds associated with cholesterol management.

About

Corn oil is a refined vegetable oil extracted from the germ of corn (maize) kernels, primarily produced in North America and used globally as a cooking medium. The oil is light yellow in color with a mild, slightly buttery flavor and a neutral aroma. Extracted through mechanical pressing and subsequent solvent extraction or modern expeller pressing methods, corn oil contains predominantly polyunsaturated and monounsaturated fatty acids, with lower saturated fat content compared to animal fats. The refinement process removes impurities and increases the oil's smoke point to approximately 450°F (230°C), making it suitable for high-heat cooking applications.

Culinary Uses

Corn oil is widely employed in North American, Latin American, and Asian cuisines as a versatile cooking fat for frying, sautéing, and baking. Its high smoke point and neutral flavor make it ideal for deep-frying, pan-frying, and stir-frying without imparting unwanted flavors to foods. The oil is commonly used in commercial food production, salad dressings, and mayonnaise manufacture. Its neutral taste allows it to serve as a carrier oil in marinades and vinaigrettes while supporting rather than competing with other flavors.
