Desiccated coconut is dried, shredded coconut meat obtained from the endosperm of mature coconut (Cocos nucifera) fruit. The fresh coconut meat is mechanically shredded or grated and then dried through hot air circulation to remove most of its moisture content, typically reducing water content to 2-4%. The resulting product is a fine to medium-textured, off-white to pale cream-colored granular ingredient with a distinctly sweet, nutty coconut flavor and high oil content.

Culinary Uses

Desiccated coconut is widely used in both sweet and savory applications across tropical and Asian cuisines. It appears as a key ingredient in curries, particularly Thai and Indian preparations, where it contributes richness and body. In baking and confectionery, it is mixed into cakes, cookies, macaroons, and fillings, or used as a coating for confections and pastries.
