Summer squashes are low in calories and rich in vitamin C and fiber. Winter squashes are excellent sources of beta-carotene, potassium, and B vitamins, with higher carbohydrate and natural sugar content than summer types.

Squash comprises a diverse group of plants belonging to the Cucurbitaceae family, native to the Americas and domesticated over 8,000 years ago. The term encompasses both summer and winter squashes, which differ primarily in harvest timing and skin thickness. Summer squashes (zucchini, yellow crookneck, pattypan) are picked immature with tender, edible skins and soft seeds, while winter squashes (butternut, acorn, delicata) are harvested at full maturity with hard rinds and mature seeds. All varieties contain watery, mild flesh with subtle nutty or sweet notes that intensify with cooking. Winter squashes develop higher sugar content as they cure and store.

Squashes vary widely in color (pale green to deep orange), shape (cylindrical, bulbous, elongated), and size (4 ounces to 25+ pounds). Flavor and texture range from delicate and watery in summer types to dense, starchy, and sweet in winter varieties.

Culinary Uses

Summer squashes are typically sautéed, grilled, or roasted whole or sliced, used raw in salads, and incorporated into pasta dishes and stir-fries. Their mild flavor and tender texture make them ideal vehicles for bold seasonings and other ingredients. Winter squashes are roasted, pureed into soups and sauces, baked, or cut into chunks for braises and curries. The flesh readily absorbs complementary flavors such as sage, cinnamon, nutmeg, and brown butter. Both types feature prominently in Mediterranean, Asian, and Latin American cuisines. Seeds from mature squashes are often roasted as snacks or garnishes. Squash blossoms are edible and prized for their delicate flavor, used in risottos, quesadillas, and light sautés.
