Cucumbers are the elongated, cylindrical fruits of *Cucumis sativus*, a sprawling herbaceous vine in the Cucurbitaceae family, believed to have originated in South Asia. The fruit's thin, waxy skin ranges from dark green to pale yellow-green, enclosing a mild, watery flesh studded with small central seeds. Cucumbers are characterized by a refreshing, subtly grassy flavor and a crisp, succulent texture. Sliced cucumbers refer to the fruit cut crosswise into thin rounds or half-moons, a preparation that maximizes surface area for dressing absorption and facilitates quick chilling.

Key varieties include the smooth English cucumber (seedless and elongated), the bumpy Kirby cucumber (preferred for pickling), and the common slicing cucumber found in most markets.
