Rich in polyunsaturated and monounsaturated fats, with a favorable ratio of omega-6 to omega-3 fatty acids; contains sesamin and sesamol, compounds with antioxidant and anti-inflammatory properties. Good source of vitamin E and minerals including copper and manganese.

Sesame seed oil is an edible oil extracted from sesame seeds (Sesamum indicum), an ancient oilseed crop native to India and widely cultivated throughout Asia, Africa, and the Mediterranean. The oil exists in two primary forms: refined sesame oil, which is light in color and neutral in flavor, produced from raw seeds; and dark sesame oil (also called toasted sesame oil), which is amber to dark brown with a rich, nutty, deeply aromatic character, produced by pressing roasted seeds. Dark sesame oil is the predominant form used in East Asian cuisine, particularly Chinese, Japanese, and Korean cooking, while refined versions appear more frequently in Middle Eastern and Indian cuisines. The oil has a smoke point of approximately 350-410°F (175-210°C) depending on the degree of refinement.

Culinary Uses

Sesame seed oil serves distinct culinary roles depending on its form. Dark (toasted) sesame oil functions primarily as a flavor enhancer and finishing oil rather than a cooking medium—it is drizzled over soups, stir-fries, noodles, and dressings at the end of cooking to impart its signature nutty depth. In Japanese cuisine, it appears in dipping sauces and marinades; in Chinese cooking, it seasons hot and cold noodle dishes; and in Korean cuisine, it features in bibimbap and other grain bowls. Refined sesame oil serves as a neutral cooking oil suitable for sautéing, frying, and baking in Middle Eastern and South Asian applications. Both forms are essential in traditional dressings, particularly in Asian sesame-vinegar combinations.
