The entire plant—both the tender white bases and crisp green tops—is edible and prized for its mild onion flavor with subtle sweetness. Unlike mature onions, scallions lack the pungent sulfur compounds, making them delicate enough for raw consumption while still contributing onion notes to dishes.
Different regions produce distinct cultivars: Japanese varieties tend toward longer, thinner bulbs with more pronounced white sections, while American and European types often have less-developed bases.
