Cayenne is a hot chili pepper (Capsicum annuum var. longum) native to Central and South America, now cultivated worldwide with significant production in India, China, and West Africa. The pepper is typically 2-3 inches long, tapered, and bright red when mature. Dried cayenne peppers are ground into a fine, pungent powder ranging from orange-red to deep red in color. The heat level is measured at 30,000–50,000 Scoville heat units (SHU), making it moderately hot with a sharp, slightly smoky flavor profile that builds gradually on the palate.

Cayenne's primary compounds are capsaicinoids, particularly capsaicin, which produce its characteristic pungency. Beyond heat, the spice imparts a fruity, slightly earthy undertone with minimal sweetness, distinguishing it from milder red chili powders.

Culinary Uses

Cayenne functions as both a seasoning and medicinal spice across global cuisines. It is essential in Latin American, Creole, Indian, and Southeast Asian cooking, where it seasons soups, stews, curries, rice dishes, and sauces. Common applications include Cajun and Creole dishes (gumbo, étouffée), Indian curries and chutneys, and Mexican salsas. Cayenne is used to add heat to egg dishes, seafood preparations, and roasted vegetables. As a condiment, it appears in hot sauces and spice blends such as chili powder and Creole seasoning. The powder dissolves readily in liquids and fats, making it ideal for marinades, dressings, and compound butters. A small amount (¼ to ½ teaspoon) significantly affects a dish, so judicious use is recommended.
