A Rock Cornish hen (also called Cornish hen or Cornish game hen) is a hybrid meat bird developed in the mid-twentieth century by crossing Cornish fowl with White Plymouth Rock chickens, selected for rapid growth and tender, flavorful meat. Despite the name, these are domesticated chickens, not game birds, and are considerably smaller than standard broiler chickens, typically weighing 1.5 to 2.5 pounds at market weight. The breed produces birds with white skin, a compact body, and meat that is proportionally darker and more flavorful than conventional broilers.

Rock Cornish hens are characterized by their small size, which makes them suitable for single or dual servings, their tender texture, and their relatively high meat-to-bone ratio compared to their body weight. The meat is slightly more flavorful and darker than standard chicken due to the birds' genetics and faster maturation.

Culinary Uses

Rock Cornish hens are prized for individual or small-group presentations, as a single bird provides an elegant single serving or two modest portions. They are roasted whole, either split in half for plating, or served intact as a showpiece preparation. Common applications include roasting with aromatics, spice rubs, or glazes; grilling halved birds; and braising. The smaller size allows for even, rapid cooking, making them ideal for high-heat roasting at 450°F or higher. They pair well with Mediterranean herbs (thyme, rosemary), Asian marinades, or classic French preparations. The meat's slightly deeper flavor tolerates bolder seasonings than standard chicken.
