Raisins are dried grapes (Vitis vinifera) produced by dehydrating fresh grapes either in the sun or through mechanical drying processes. The primary varieties used for raisin production include Thompson Seedless, Flame Seedless, and Muscat grapes, with California, Turkey, and Iran as the world's largest producers. Raisins are wrinkled in appearance, brown to dark brown in color, and possess a concentrated sweet flavor with subtle tannic notes characteristic of the original grape variety.

When grapes are dried, their sugars concentrate dramatically—a pound of fresh grapes yields approximately one-quarter pound of raisins—resulting in a moisture content reduced from 80% to roughly 15%. This transformation intensifies the natural sweetness and imparts a complex flavor profile ranging from fruity and caramel-like in lighter varieties to deeper, wine-forward notes in darker, aged raisins.

Culinary Uses

Raisins are used globally in both sweet and savory applications. In baking, chopped raisins are incorporated into breads, cakes, cookies, and pastries; in breakfast applications they feature prominently in oatmeal, granola, and cereals. Chopped raisins also appear in Middle Eastern pilafs, Spanish rice dishes, and Indian biryanis, where they provide textural contrast and sweetness. In trail mixes, granola bars, and energy balls, they serve as a natural sweetener and binder.
