The thawing process releases fruit juices, concentrating sugars and making the cherries ideal for incorporation into sauces, baked goods, and compotes.

Thawed frozen cherries are extensively used in dessert applications, particularly in pies, tarts, cobblers, and cakes where their softened texture integrates seamlessly into batters and fillings. The released juices are valuable in sauce-making for both sweet and savory applications—cherry gastrique complements game and duck, while cherry coulis enhances pastries and ice cream. In Central and Eastern European cuisines, thawed frozen cherries feature prominently in traditional preparations such as kisel (berry compote) and cherry soups. The fruit's pectin content and juice make it suitable for jam-making without additional setting agents.
