Pepper powder is ground spice derived from the dried berries (peppercorns) of Piper nigrum, a climbing vine native to the Malabar Coast of India. The peppercorns are harvested at varying stages of ripeness—green peppercorns are picked immature, black peppercorns are fully ripe and sun-dried until dark and shriveled, and white peppercorns are fully ripe berries with the outer hull removed and dried. Pepper powder is produced by grinding these dried peppercorns into a fine to medium-ground powder.

The flavor profile is pungent and sharp, with complex notes ranging from floral and fruity in white pepper to earthy and slightly piney in black pepper. Black pepper powder, the most common form, delivers an initial bright heat followed by underlying warm, woody undertones. The pungency comes from the alkaloid piperine, which comprises 5-9% of black peppercorns.
