The heart comprises the innermost edible portion of the artichoke bud, consisting of the pale, tender leaf bases and the central choke (the fuzzy central disk) which is typically removed. Frozen artichoke hearts are harvested at peak maturity, blanched, and rapidly frozen to preserve texture and nutritional content. They range in color from pale green to olive-green and have a mild, slightly nutty, tender flavor that develops further during cooking. The frozen product is available year-round and has become a convenient staple in modern kitchens, offering consistency comparable to fresh hearts when properly prepared.
