About

Prawns (Penaeus species and related genera) are decapod crustaceans closely related to shrimp, distinguished by their larger size, longer body length, and more pronounced rostrum (snout). Native to saltwater environments across temperate and tropical oceans worldwide, prawns are commercially harvested from wild fisheries and extensive aquaculture operations. The meat is firm, translucent when raw, and turns opaque white or pink upon cooking, with a delicate, slightly sweet flavor. Frozen prawns are rapidly chilled immediately after harvest to preserve quality, texture, and nutritional content; they are typically sold with shells intact (head-on or head-off) or as peeled tails.

When thawed properly, frozen prawns retain comparable texture and flavor to fresh specimens. King prawns (Penaeus monodon) and tiger prawns (Penaeus semisulcatus) are among the most commercially significant species, prized for their substantial size and firm meat.

Culinary Uses

Frozen prawns are a versatile protein widely employed across Mediterranean, Asian, Indian, and contemporary global cuisines. They are grilled, pan-seared, stir-fried, poached, and steamed; common preparations include Spanish gambas al ajillo (garlic prawns), Thai tom yum, Indian tandoori prawns, and Italian risotto ai frutti di mare. The firm texture withstands brief high-heat cooking, while the sweet flavor pairs effectively with garlic, chili, lemon, coconut, and soy-based sauces. Proper thawing—either overnight under refrigeration or briefly in cold water—prevents moisture loss and maintains textural integrity. Frozen prawns offer year-round availability and practical convenience without substantial quality compromise when handled correctly.
