About

Shrimp are decapod crustaceans of the order Caridea, characterized by their elongated bodies, long antennae, and ten legs. Medium-sized shrimp typically range from 41 to 50 count per pound, offering a balance between substance and delicate texture. When peeled and deveined, the shell and intestinal tract (the dark vein running along the dorsal surface) have been mechanically or manually removed, yielding a ready-to-cook product. Frozen shrimp retain quality through rapid cryogenic freezing, which halts enzymatic degradation and microbial growth. The meat is mild, slightly sweet, and becomes firm and opaque upon cooking due to protein denaturation.

Shrimp sourced from both wild capture and aquaculture operations are widely available. Medium size is considered the sweet spot for balance between flavor absorption and quick, even cooking in home and professional kitchens.

Culinary Uses

Peeled and deveined frozen shrimp are a versatile, time-saving ingredient used across Mediterranean, Asian, and Latin American cuisines. They feature in stir-fries, pasta dishes (notably scampi and fra diavolo), ceviche, paella, curries, and sautés. Medium shrimp cook quickly—typically 2-3 minutes—making them ideal for weeknight preparations and professional kitchen efficiency. They pair well with garlic, lemon, chili, coconut milk, and tomato-based sauces. Proper thawing (in the refrigerator or in cold water) and avoiding overcooking (which renders them rubbery) are key to quality results.
