The processed olives are pitted and sliced into rounds of varying thickness, from paper-thin to approximately ¼ inch, creating a convenient form for direct consumption or culinary application. Sliced olives retain the characteristic briny, sometimes bitter or fruity flavor depending on their cure method and origin, with Mediterranean varieties (Kalamata, Castelvetrano, Manzanilla) being among the most common for commercial slicing.
