Non-fat dry milk, also known as skim milk powder or dried milk solids, is the product of pasteurized skim milk from which the water has been removed through evaporation and spray-drying. The powder reconstitutes readily with water to approximate the composition and taste of fresh skim milk. Production involves concentration of skim milk followed by spray-drying, which preserves the nutritional integrity of the original milk while extending shelf life significantly.
