Lemons are citrus fruits native to Southeast Asia, with a tough, bright yellow skin when ripe, and the rind develops its full aroma and color intensity as the fruit matures. The oil composition varies slightly by lemon variety and growing conditions, with Eureka and Lisbon lemons being among the most common sources for zest.

Lemon rind is primarily composed of water and cellulose, with the essential oils (limonene being the dominant compound) concentrated in thousands of microscopic oil cells just beneath the surface.
