The plant yields small, green or black seed pods containing aromatic seeds with a complex flavor profile combining warm, slightly citrusy, and subtly sweet notes with hints of eucalyptus and camphor. Green cardamom, the more common variety, is harvested before full ripeness, while black cardamom (Amomum subulatum) originates from Nepal and offers smokier, more menthol-forward characteristics. The powder is created by drying the entire pods and grinding the seeds to a fine consistency, concentrating the volatile oils and aromatic compounds responsible for the spice's distinctive character.
