The edible core is located beneath the outer fronds and represents the growing center of the tree; harvesting requires felling the tree, making it a controversial but regulated crop. The texture is tender and fibrous, with a mild, slightly sweet flavor reminiscent of artichoke hearts or tender bamboo shoots. It has a crisp yet delicate consistency that becomes tender when cooked.

Palm hearts are typically sold canned or preserved in brine, though fresh hearts are available in tropical regions. The ingredient is ivory to pale cream in color and cylindrical in shape, ranging from 4-12 inches in length depending on the species and maturity of the heart.

Culinary Uses

Palm heart is primarily used in Latin American, Asian, and contemporary global cuisines. In Brazil and other Central/South American regions, it is featured in salads, particularly in preparations called "salada de palmito." The ingredient is commonly served chilled in vinaigrette dressings or with mayonnaise-based preparations.
