It is a traditional fromage à pâte molle with a soft, spreadable texture and a natural white surface mold (Penicillium candidum) that develops naturally or is applied during production. The cheese has a mild, slightly tangy flavor with delicate mushroom and earthy notes, becoming more complex as it ages.

Neufchâtel is distinguished by its heart-shaped mold (though square and cylindrical forms also exist) and its relatively high moisture content. French Neufchâtel must meet strict AOC (Appellation d'Origine Contrôlée) standards, including specific production methods and a minimum dry matter content. A lower-fat American version exists, formulated as a cream cheese substitute, though it differs significantly from the traditional French original.
