The oil is produced through cold-pressing or solvent extraction of mustard seeds, yielding a distinctive sharp, spicy flavor with a characteristic peppery bite. The oil's potency comes from glucosinolates, compounds that release isothiocyanates when the seed is crushed, creating the characteristic heat. Mustard oil ranges in color from golden-yellow to reddish-brown depending on the seed variety and processing method.

Different mustard seed varieties produce oils with slightly different flavor intensities: black mustard seeds yield the most pungent oil, while yellow mustard seeds produce milder versions. The oil has a smoke point of approximately 450°F (232°C), making it suitable for high-heat cooking.
