About

Mozzarella is a semi-soft, stretched-curd cheese originating from southern Italy, traditionally made from the milk of water buffalo (mozzarella di bufala) or cow's milk. The cheese is characterized by its mild, delicate flavor and high moisture content, which results from a distinctive pasta filata (stretched-curd) production method where curds are heated and stretched into elastic masses. Shredded mozzarella is mozzarella that has been cut or grated into thin strands, typically coated with anti-caking agents (such as cellulose) to prevent clumping during storage. This form differs from fresh mozzarella balls (bocconcini) in texture and moisture level—shredded mozzarella is semi-firm and designed for convenient melting in cooked applications.

Culinary Uses

Shredded mozzarella is a staple ingredient in Italian-American and international cuisine, prized primarily for its superior melting properties. It is the dominant cheese on pizza, used both as a base layer and finishing element, and appears extensively in baked pasta dishes such as lasagna and baked ziti. The ingredient also features in quesadillas, enchiladas, gratins, casseroles, and cheese-topped sandwiches. Its mild flavor allows it to complement rather than dominate dishes, making it suitable for applications where even melting and stretch are desired without strong cheese flavor. It performs optimally when heated to 130–160°C, where it achieves characteristic browning and elasticity.
