The most common culinary varieties are spearmint (Mentha spicata) and peppermint (Mentha × piperita), a hybrid of spearmint and watermint. Mint leaves are characterized by their bright green color, oval-to-lance-shaped form, and distinctively cool, refreshing aromatic profile. The flavor is crisp and herbaceous with menthol notes that create a characteristic cooling sensation on the palate. Spearmint tends toward a sweeter, more delicate flavor, while peppermint offers a sharper, more peppery taste with higher menthol content.

Mint thrives in temperate climates and is remarkably easy to cultivate, growing as a perennial that spreads vigorously through rhizomes. The plant's volatile oils, concentrated in glandular hairs on the leaf surface, are responsible for its distinctive aroma and flavor compounds.

Fresh mint appears in cocktails (mojitos, mint juleps), refreshing beverages (Turkish mint tea, Indian lassi), Middle Eastern salads (tabbouleh, fattoush), and Southeast Asian dishes (Vietnamese pho, Thai salads). Mint complements lamb, fish, and yogurt-based preparations particularly well. Dried mint is commonly used in spice blends and as a garnish or flavoring agent. The leaves should be added late in cooking to preserve their aromatic qualities, or used fresh as a finishing element for maximum impact.
